A friend gave me an idea recently for a great alternative to a sandwich! Not sure if kids would necessarily go for this, but maybe if you don’t have picky eaters, this would be a great alternative to using bread all the time.
1. Mix up tuna or chicken as you would when making chicken or tuna salad (mayo, salt, pepper).
2. Take a sweet green, red, or yellow pepper and cut it in half, discarding the middle seed section.
3. Top the pepper with the tuna or chicken salad and enjoy!
I’ve even added some sliced avocado on top for a little extra health bonus. The crunchy, sweet, juicy flavor of the pepper really makes it a refreshing and healthy snack or lunch!
